A few words about me
I am a classically trained pâtissier, who learned my trade in the south of France who has specialised in making unique cakes for my customers to enjoy for over 20 years.
In the eighties I worked in a traditional patisserie (cake shop) in Bandol in the South of France, followed by formal pastry cooking school in the city of Marseille. These experiences have given me a strong foundation of knowledge in the field of pastry and cake making. Since completing my training I have built on these underlying skills, bringing me to the fine cake chef I am today.
At the beginning of my training, like many trades, we spent many hours copying the masters. But later, as our skills developed, it was our turn to embark on creating some new recipes and techniques. Our ultimate aim being to please the palette of our customers, is entwined with the self-satisfaction of creating something truly unique and not available anywhere else. It is not an easy path though, and requires long hours in the kitchen- learning what works. And more importantly, what doesn’t.
Since the 1990′s I have been creating outstanding cakes for people across Newcastle and the Hunter Valley area, and it is always a wonderful feeling to satisfy not only many customers, but also be appreciated and recognised by many peers and professionals in the cooking industry as being one of the leading pâtissier’s in the region.
- One of my many specialties, and one of my favourite cakes to make. The Croquembouche is always a favourite at any event.
- I make a variety of tarts for all occasions. Very popular for daytime events such as morning and high teas. Like all of our cakes, only the very best ingredients are used.
- I produce both baked and cold set cheesecakes for my customers. Some of the most popular flavours are Baked Vanilla and Blueberry, Raspberry and White Chocolate, and Passion fruit.

I have specialised my business of fine cake making as it should be. That is, in the artisan style where the craftsman both respects and is proud of his trade.
All my products are made, not only from scratch and daily are so many claim, but also without any store-bought cake mixes or preservatives. This way, I can give all of my cakes a distinctive flavour and texture.

All my products are made, not only from scratch and daily are so many claim, but also without any store-bought cake mixes or preservatives. This way, I can give all of my cakes a distinctive flavour and texture. In other words there is no one recipe fits all in my kitchen and all cakes can be adjusted to client requirements. Each dessert is prepared in a hygienic commercial kitchen by me at my residence. All cakes are made to order on premise, so please do not be upset if you arrive expecting a shop front, there isn’t one. Having said that, if you prefer to pickup a cake you have ordered, you are more than welcome to.
